  • 6 large eggs

  • 30 grams unsalted butter, melted
  • 1/2 cup warm water
  • Fresh dill, chopped
  • Green onions, chopped
  • 23 tablespoons mayonnaise
  • 1 large onion, finely chopped
  • 2 bell peppers, diced
  • 1 large carrot, grated
  • 1 cup tomato passata (strained tomatoes)
  • 60 grams pizza mozzarella cheese, grated
  • Salt and sugar to taste
  • Vegetable oil for greasing
  • Salt and freshly ground black pepper to season

Instructions

  1. Preheat your oven to 350°F (180°C).
  2. In a medium saucepan, bring 2 cups of salted water to a boil. Add the rice and cook according to package instructions until tender, then drain any excess water.
  3. In a bowl, beat 3 eggs and season with salt and a pinch of sugar. Incorporate the milk, flour, melted butter, and warm water, mixing until you have a smooth batter.
  4. Heat a non-stick pan over medium heat and lightly grease with vegetable oil. Pour in enough batter to cover the bottom of the pan. Cook until the bottom is golden brown, then flip to cook the other side. Repeat with the remaining batter to make several thin cakes. Set them aside.
  5. Hard boil the remaining 3 eggs for 10 minutes, then cool, peel, and grate them.
  6. Combine the grated eggs with the cooked rice, chopped dill, green onions, and mayonnaise. Mix well.
  7. Lay out the thin cakes and evenly spread the rice mixture over them. Roll them up tightly and slice into segments if desired.
  8. Sauté the chopped onion in a pan over medium heat until translucent. Add the diced peppers and cook for an additional 5 minutes.
  9. Stir in the grated carrot, then pour in the tomato passata. Season with salt and pepper. Let the vegetable mixture simmer for 5-7 minutes until the flavors meld together.
