Description

Indulge in the ultimate dessert fusion with Cheesecake Tacos, featuring crispy graham cracker taco shells filled with creamy cheesecake and topped with a luscious strawberry glaze.

Ingredients

Scale

For the Taco Shells:

  • 7 9-inch flour tortillas
  • 1 cup graham cracker crumbs
  • 1 ½ tablespoons granulated sugar
  • ⅓ cup butter, melted

For the Cheesecake Filling:

  • 8 ounces cream cheese, room temperature
  • 3 tablespoons cheesecake instant pudding mix
  • 1 cup heavy whipping cream
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract

For the Topping:

  • ½ cup chopped strawberries
  • ¾ cup strawberry glaze (or strawberry pie filling mixed with fresh strawberries)

Instructions

Preparing the Taco Shells:

  1. Preheat your oven to 400 degrees F (200 degrees C).
  2. In a shallow dish, mix together the graham cracker crumbs and granulated sugar.
  3. Using a 3 ¾ inch circle cookie cutter, cut out circles from the tortillas. You should get about 3 circles per tortilla.
  4. Prick each tortilla circle several times with a fork to prevent air bubbles.
  5. Brush both sides of each tortilla circle with melted butter, then press into the graham cracker mixture to coat evenly.
  6. Fold each coated circle in half and place it between the cups of an upside-down muffin tin to form a taco shape.
  7. Bake in the preheated oven for 11 minutes, or until the edges are golden brown and crispy. Allow to cool in the pan to retain their shape.

Making the Cheesecake Filling:

  1. In a large mixing bowl, beat the cream cheese with a hand mixer until smooth.
  2. Add the cheesecake pudding mix, half of the heavy cream, powdered sugar, and vanilla extract. Beat until well incorporated.
  3. Add the remaining heavy cream and beat until the mixture is smooth and fluffy.
  4. Transfer the cheesecake filling into a piping bag fitted with a large star tip.

Assembling the Tacos:

  1. Pipe the cheesecake filling into each cooled taco shell, starting from the middle and working your way to the edges in a back-and-forth motion.
  2. In a small bowl, mix the chopped strawberries with the strawberry glaze.
  3. Spoon the strawberry topping over the filled taco shells.

Notes

  • For a gluten-free version, use gluten-free tortillas and ensure your graham cracker crumbs are gluten-free.
  • The cheesecake filling can be customized with different pudding flavors or additional mix-ins like chocolate chips or nuts.
  • If strawberry glaze is unavailable, substitute with any fruit pie filling or homemade fruit compote.
